A DOP extra vergin olive olio called “Lucca” is produced in Lucca: It has the following cultivar: upto 90% of Frantoio(or Frantoiano or Frantoiana) , upto 30% Leccino and upto 15%other local minor varieties
The olive harvest takes place from the end of October to the end of December. The fruit must be at an optimal state of ripeness to obtain in this way, once the olive oil production process is finished,a light to medium fruity olive taste, basically sweet with spicy and a bitter taste. It takes a yellow color with more or less intense green tones.
