Necci - Chestnut pancakes

Necci are a kind of crepes made with chestnut flour typical of northern Tuscany. It is crazy how starting from a couple of simple ingredients – water and chestnut flower – you can make such a lovely and tasty dessert. Traditionally, necci are cooked in the so-called "testi", two iron plates with a long handle. First, both plates are heated on the fire and slightly greased. Once warm, the chestnut mixture is pured on one of the two hot plates, while the other is placed above, to cook the neccio on both sides. They are traditionally served with fresh ricotta cheese.
It is very easy to make necci. Ingredients:
- 400 g of chestnut flour
- 450 g of water
- a pinch of salt 
For those who do not have the traditional "testi", a simple pan or crepe-pan is all you need!
