Frantoiana soup is a traditional peasant recipe made with legumes and vegetables, flavored with extra virgin olive oil and eaten with toasted bread. It is so called because it was originally prepared during the period of production of new olive oil, when the olive presses were in full swing.
INGREDIENTS - Serves 4
HOW TO MAKE
Place all the coarsely chopped vegetables in a saucepan and add the oil. When the vegetables are wilted, add the boiled beans.
Add enough water to obtain the desired consistency.
Bring the vegetables to a boil and pour the soup into a bowl over stale bread cut into large cubes. Wait for the bread to soften and absorb the broth and serve the soup hot, seasoning with a drizzle of extra virgin olive oil and pepper to taste.
Frantoiana can also be served cold.
